The idea of  Walking Tacos was a great thing for the large group of people we had for dinner on Sunday night.This is not so much a recipe…but a GREAT idea…and if you ever need something easy for a group be it family, friends or sports team this is a great food to serve. They also make great “hand-held” food for in front of the TV.

2015 07 05 4th of July Week End Walking Taco Dinner (3) 6 tacos

1 lb ground beef
1 packet taco seasoning mix
tomatoes
chopped lettuce
chopped onions (I use tops of green onions)
black olives
sliced shredded cheese (Mexican blend, cheddar, Colby…whatever works for you)
sour cream
taco sauce or picante sauce
individual lunch-sized bags of corn chips (We used Doritos)
Directions
Brown ground beef, drain, return to pan. Add Taco seasoning mix according to directions on packet. TO ASSEMBLE: Carefully open a bag of chips along the sealed direction being careful not to”tear” the bag (because it is your bowl!!). Add whatever your heart desires. Be careful not to fill bag to full as it will be hard to mix it up. Stick a fork in it and take off!

Samantha made an ice cream cake for dessert. She made it with ice cream sandwiches that were half vanilla and half chocolate, chocolate ice cream topping and cool whip. She topped it off with a drizzle of chocolate topping and sprinkles.

2 (8 ounce) containers whipped topping (such as Cool Whip thawed
1 (12 ounce) jar hot fudge ice cream topping, warmed
1 (12 ounce) jar caramel ice cream topping
1/4 cup chopped pecans, or to taste

Directions

Arrange a layer of ice cream sandwiches in the bottom of a 9×13-inch dish; top with a layer of whipped topping, hot fudge topping, and caramel topping. Repeat layering with remaining ice cream sandwiches, whipped topping, hot fudge topping, and caramel topping, ending with a top layer of whipped topping. Sprinkle with pecans. Cover dish with aluminum foil and freeze until set, at least 30 minutes.

If you want a smaller cake, use 12 ice cream sandwiches in an 8X8 square pan.

The great thing about this cake is you can dress it up in so many different ways. Interchange ice cream sandwiches, ice cream toppings and all sorts of different candies. You can use chocolate, butterscotch, caramel or a marshmallow toppings. Select a candy toppings according to your ice cream topping flavor it’s as easy as that.

You can also use the strawberry ice cream sandwiches or a combination of both. If using chocolate go with crushed whoppers, Oreo’s, chocolate chips, M&Ms or any type of cake sprinkle.

If using butterscotch or caramel topping go with crushed butterfingers, snickers or heath bar bits. Another great flavor combination is Smuckers marshmallow topping with plain or chocolate cool whip and chocolate chips.

So you see there are so many flavor to choose from. In the end this cake will look delicious and highly impressive, and no one will realize it took less than 20 minutes to assemble.
